Last weekend we decided to open the ‘breakfast in nature’ season. I did make a small pre opening in Kenya and New Zealand, but it did not really count. I made the best possible overnight oatmeal (I’m not kidding!), packed a box with hot cocoa (just in case), blanket and everything necessary. We went over a Teupitzer See and accidentally, through our curiosity really we found the most magical forest. The ground was all covered with a soft green moss, the sun was coming through branches and it all looked like in a Hobbit Forrest. We found a tree bough, I placed a blanket on it and tried to convince Mia who was widely jumping on a moss to sit and eat with us. And just when I was almost there, a hail started to fall from the sky. In one second it became very cold, dark and wet. We hid in a car and started to eat our breakfast, but then within the next 5 minutes the sun was back. We unpacked, all ready to enjoy the forest and oops, the hail started again. It was so funny, especially that Mia was crazy about it. We were catching pieces of ice and watching it melt in our hands. I was happy that I packed this blanket, otherwise my totally wet kid could get sick. It was a perfect opening of the season, as I’ll remember it for sure. April is a unique month in Germany Next week we’re off to Tuscany for amazing food and lets hope no hail!
This is a totally ‘Mia Approved’ breakfast. You should have seen her eating, her ears were shaking. The coolest part, it’s super easy to make and you just leave it in a fridge in the evening. So easy and so fast. In the morning you simply enjoy. No additional work needed. And it tastes like raspberries with a bit of lemon.
YOU WILL NEED:
- 1 cup raspberries, frozen or fresh
- 1 cup almond milk
- 1 cup oats
- 1 tbsp chia
- 1 tbsp honey
- Juice and zest from ½ lemon
- a bit of linseed oil
In the morning, decorate with fruits, or add some yogurt, nuts, honey and so on. Whatever you have in your place or whatever you feel like.
